Tasting Notes

This wine is made from the rare Semillon Rose whose pink berries give it its beautiful colour. Citrus notes of lemon and grapefruit on the nose are followed up on the palate with hints of granny smith apples. The residual sugar and acid are well balanced, giving a crisp, lingering finish.

Food Matching

Enjoy the Semillon Rosé as an aperitif alongside goats cheese soufflés, or with pecorino and figs. For dessert apple tarte tatin is a superb match that highlights the granny smith notes in the wine. We have also enjoyed our wine with rhubarb and blueberry crumble, pear frangipani tart and pavlova. The crisp balancing acidity makes the wine a perfect match for almost any fruit based dessert. We are keen to try drinking our wine alongside lemon meringue tart or as an accompaniment to baklava. Let your imagination run riot!

Viticulture

75% of the canes were cut just below the bunch when the grapes were at 13°Baumé. Over the next few weeks we watched nervously as birds and kangaroos endeavoured to get under the nets to eat the increasingly sweet pink raisins, and as a burst of rain brought the sugar intensification and drying to a stand still for at least a week.

Fearing more forecast rain we decided to pick at 18°Baumé and delivered one and a half hand picked tonnes to Lodestone winery on the 3rd May. The unraisined bunches were picked as well and soaked and crushed alongside the raisins.

Winemaking

The grapes were left to soak overnight before being inoculated to start ferment. Once we had reached our desired alcohol and residual sugar level fermentation was stopped by the addition of sulphur and fining with bentonite. Acid levels were adjusted to balance the residual sugar. Winemaker: Michael Sykes (Lodestone)
